Why is submerging in ice bath included for the protein extraction especially in albumin?

I have no idea what protein extraction you are doing. The ice bath cools your sample to the optimum temperature for whatever process you are doing. If, for example, you are doing an acetone precipitation, cooling the sample will decrease the solubility of the protein in the buffer thus aiding it's precipitation.
